Banana Mocha Muffins

Serves: 30-35 mini muffins
- 4 medium bananas, mashed
- ⅓ cup sugar
- ¼ cup brown sugar
- ½ cup oil
- ¼ cup canned coconut milk
- 1 egg
- 1½ cups flour
- 1 tsp instant coffee, decaf or regular
- 1½ tsp baking soda
- 1 tsp salt
- ⅓ cup mini or micro chocolate chips
- nonstick baking spray
- Preheat your oven to 350°F. Spray a mini muffin pan with nonstick baking spray.
- In a bowl, mix together bananas, sugars, oil, coconut milk and egg.
- In a separate bowl, stir together the dry ingredients and incorporate into the banana mixture in 3 additions. Mix until just combined.
- Fold in the chocolate chips.
- Fill each well three-quarters full.
- Bake 12-14 minutes.
For full sized muffins, bake 20-25 minutes.
