Banana Mocha Muffins

Serves: 30-35 mini muffins
 
Ingredients
  • 4 medium bananas, mashed
  • ⅓ cup sugar
  • ¼ cup brown sugar
  • ½ cup oil
  • ¼ cup canned coconut milk
  • 1 egg
  • 1½ cups flour
  • 1 tsp instant coffee, decaf or regular
  • 1½ tsp baking soda
  • 1 tsp salt
  • ⅓ cup mini or micro chocolate chips
  • nonstick baking spray
Instructions
  1. Preheat your oven to 350°F. Spray a mini muffin pan with nonstick baking spray.
  2. In a bowl, mix together bananas, sugars, oil, coconut milk and egg.
  3. In a separate bowl, stir together the dry ingredients and incorporate into the banana mixture in 3 additions. Mix until just combined.
  4. Fold in the chocolate chips.
  5. Fill each well three-quarters full.
  6. Bake 12-14 minutes.
Notes
For full sized muffins, bake 20-25 minutes.
